Crispa Crepes

(Irvine, CA – Summer 2013) – Crepes aren’t just for dessert. At CrispaCrepes at Northpark Plaza, they are made-to-order and filled with a variety ofsavory fillings for a fresh and flavorful meal.

The idea started in the apartment kitchen of a French student HadrienCurs, who was living in Southern California. His go-to meal of a simple crepewas something he could create in a matter of minutes, reminded him of home and was much healthier than the fast-food alternatives.

So when he graduated from college, Curs decided to open up his own creperie.

“The crepe is a really versatile vehicle for any number of ingredients andflavors, that’s the beauty of it, but the crepe isn’t heavy so you can have alight but still filling meal.”

At Crispa Crepes, the menu features an array of savory crepes with familiar flavors, all under $10: the “Greek” crepe is filled with grilled chicken breast strips, feta, fresh tomato, fresh spinach leaves, red onions, olive tapenade and thyme, while the “Mexican” crepe is filled with grilled chicken breast strips, chili con carne, sour cream, aged Swiss cheese, spinach leaves, tomato, red onions, fresh cilantro. There’s also the “Moroccan,” with grilled chicken breast strips, hummus with cumin, tomato, red onions, fresh basil leaves, olive tapenade and shredded carrots. Of course, you can’t go wrong with a more classic French crepe with ham, aged Swiss and thyme. All savory crepes come with a side of mixed greens salad dressed in a housemade vinaigrette.

That doesn’t mean there aren’t any dessert crepes – of course there are. The “Crispella” features Crispa Crepes’ own housemade chocolate hazelnut spread folded in a delicate, crisp crepe with powdered sugar and topped with a dollop of whipped cream. There’s also a sweet crepe with stewed apples, with a drizzle of warm caramel, cinnamon and garnished with honey-roasted almonds.
