Irvine Spectrum Center has announced that another exclusive restaurant will join the center later this year. This fall, restaurateurs Paul Fleming and Brian Bennett will open the first Orange County location of Paul Martin’s American Bistro in a space occupying more than 8,000 square feet at Irvine Spectrum Center.
Offering contemporary American cuisine in a comfortably sophisticated setting, Paul Martin’s American Bistro is a long-nurtured dream of both Fleming and Bennett to create a restaurant “we’ve always wished was in our neighborhood.” The menu is built upon locally grown, organic and seasonal foods from sources and purveyors who were handpicked by the two after a year’s search. With the success of the original Roseville restaurant in Northern California, the team expanded with a second location in El Segundo and is now bringing their back-to-the-farm concept to Orange County.
The menu will offer something for every taste including Cedar Planked Salmon baked with shallots and bacon; sautéed Bloomsdale spinach and crimini mushroom jus; Brick Chicken from Pitman Family Farms with mashed potatoes and fresh herb jus, and a Bistro Burger with fresh Prime chuck from Myers Ranch all-natural herd. The varied selections will encourage sharing and sampling, with an assortment of small plates, a butcher’s board of artisan cheese and salume, and a seafood platter with the freshest oysters, shrimp and crab. Other value-priced offerings include a “Taste of Paul Martin’s” happy hour featuring $4 and $6 small plates and specialty beverages daily from 3-7 p.m., as well as weekend prix fixe three course dinners for $30.

Paul Martin’s focus on local, sustainable and organic extends to the elegantly rustic bar, which will feature seasonal fruit-infused vodkas, an interesting array of locally crafted beer and a list of more than 100 bottles of wine, primarily from California.
The interior, at nearly 7,000 square feet, will be comfortable yet sophisticated, with old brick, wood, zinc, polished concrete floors, soft lighting and hospitable furnishings. The restaurant will also offer a beautiful outdoor patio with more than 1,600 square feet.

Paul Martin’s American Bistro® will follow three other restaurant openings at Irvine Spectrum Center this year: Wood Ranch BBQ, offering a premium-casual American menu featuring award-winning barbecue, and Capital, a popular Chinese dim sum and seafood restaurant will both open this summer.
