Rustica, an exclusive new restaurant by award-winning Chef Grant MacPherson, has opened at Fashion Island. Rustica features a blend of modern Italian and California cuisine.
Having been involved in opening more than 50 restaurants, including positions at Wynn and Bellagio in Las Vegas, Chef MacPherson is back under the toque at this more casual and relaxed restaurant.
The menu offers Almond wood-fired flatbreads, hand-crafted pastas and unique salads, as well as entrees like Black Peppered Kobe Beef Carpaccio, Wild Mushroom Risotto and Roasted Pacific Salmon with White Beans. Standouts on the menu include Tuna Nicoise, Golden Beet Salad with Polenta Croutons, and dry-aged beef. Numerous homemade desserts are also offered for a sweet ending to meals.
“I believe in providing our guests with the ultimate dining experience,” said MacPherson. “At Rustica, you’re made to feel like the chef’s friend or family at every visit.”
At 3,700 square feet, Rustica has a casual and inviting atmosphere along with patio dining. The restaurant is open daily from 11:30 a.m. to 11 p.m., with the last seating at 9 p.m. on weekdays and 9:30 p.m. on weekends. About Chef Grant MacPherson
A native of Scotland, MacPherson has cooked several times in the famed James Beard house in New York, and has cooked alongside culinary stars such as Joel Robuchon, Jean Georges Vongerichten, Michael Mina, Thomas Keller and the late Jean Louis Palladin. He has also created menus for royalty, heads of state, and other international elite at prestigious hotels and charity galas around the world. Margaret Thatcher, George W. Bush, Princess Diana, Nelson Mandela, Julia Roberts and others have enjoyed his cuisine.
MacPherson was a Gold Medalist at the 1992 Culinary Olympics in Frankfurt, Germany, and has directed prestigious resort kitchens on five continents, including The Regent, Ritz-Carlton, The Four Seasons, Malaysia’s Datai Hotel, and the Raffles Hotel in Singapore. He also serves as a consultant and Executive Chef for Viking Range Corporation, developing products, conducting culinary events and has authored a cookbook with Viking, to be published this summer.
MacPherson’s vast experience also includes being Executive Chef for the esteemed Steve Wynn Organization, where he set the bar in high caliber dining and garnered numerous accolades for The Bellagio, Wynn Las Vegas and Wynn Macau. Under MacPherson’s direction, each Wynn resort received AAA Five Diamond Awards, Forbes Five Star Awards and Michelin Guides Five Red Pavilions Awards.
